Inspired by the bounty of New Mexico, and the small community of Eldorado, Arable was born.
The name helps us tell a story of who we are and what we do. We source local, we support local economy, and we partner with other local businesses to achieve an end goal of community. By doing so we hope to offer a warm welcoming environment where you can enjoy fine crafted food and drink- join us!
A lifetime of passion for food led Renée to a degree in Culinary Arts from the Cooking and Hospitality Institute of Chicago, an achievement of Sommelier Certification from the Court of Master Sommeliers, and decades of experience at some incredible restaurants in Chicago and Santa Fe. With a philosophy of dining as a convivial experience, feeding the soul as well as the appetite, comfort food became a natural focus. Creative modern versions of classic Southern and Midwestern dishes are prevalent on Arable’s menu as well as our original restaurant Loyal Hound.

After moving to New Mexico from Virginia, over 25 years ago, Dave fell in love with restaurant work as a part-time gig while teaching elementary in Eldorado. A genuine, friendly, approachable personality makes him a perfect fit for the hospitality industry. His southern hospitality and ability to do everything from cook your food to pair a beverage with it makes Dave the perfect Host. When Dave isn’t busy running the operations of both Arable and Loyal Hound you will find him conversing with the guests making sure they are having a quality dining experience.
